This recipe is easy and delicious.
Nutritional information per half: 138 Calories, 10g Fat, 3g Protein, 12 Carbs, 2g Fibre, 10g Net Carbs
Serves 2 – 4
- Two small butternut squash
- 50g Feta cheese
- 4-5 sun-dried tomatoes
- 1 tbs chopped fresh basil
- 2 tbs olive oil
- 1/2 ts salt
- 1/2 ts black pepper
Preheat the oven to 200C/400F degrees.
Cut the butternut squash in half and scoop out the seeds.
Pat buttersquash skin with olive oil.
Bake in the oven for 45 minutes until the flesh is soft.
Remove from the oven and using a spoon, scoop out the flesh and place into a bowl.
Add the feta, tomatoes and seasoning to the bowl and mix well.
Place the filling back into the butternut squash shells and pop back into the oven for 5 minutes.
Eat and enjoy!
